Evolve: Ambrosia on a Small Plate

When visiting €the other Georgetown€ Adams Morgan, check out this chic, sophisticated first-class restaurant/lounge that transports you to Beverly Hills. Evolve is the hottest in place to be seen and heard for the cool and the beautiful, since opening on New Year€s Eve 2008. Innovative restaurateurs Patrick Moore and Mahiri Jones, both 34, and Jason Washington, 32, opened up a two-level space, formerly Pharaoh Rock and Blues in Adams Morgan are considered dining power brokers. These Washingtonian and Marylander men have done their homework.

€We are pacing ourselves in all aspects, like the name states, we evolve,€ Moore said. They hired executive chef Earnest Datcher who mastered his culinary gifts at 1789 and Old Ebbit Grill.

Creating top-notch dishes for 18-years, he has the freedom to create an evolution of spices marrying flavors.

€In an area as diverse as Adams Morgan, you want to make sure your menu matches that diversity,€ says a connoisseur that showcases the best ingredients on small plates (tapas) for colossal appetites.

Vegan and vegetarian foods make for popular fare. The talk-of-the-town is the house specialty - Evolve Spiced French Fries €" made with fresh rosemary, garlic, sea salt and tricolor peppercorns. Other popular menu items include the elegant asparagus and mushrooms, asparagus and shitake mushrooms and white wine and shaved parmesan.

Seafood lovers can savor the elaborate pan fried oysters served with wilted spinach and saffron butter sauce.
For customers who still enjoy dished with meat, the grilled organic lamb burger infused with rosemary. The highlight is the extraordinary additions: garlic and other €hush-hush€ spices, topped with crumbled feta and pomegranate aioli. Datcher is considered a master chef on the cutting edge of originality, but is deep-rooted in the basics.

The black and white trendy minimalism dcor with exposed brick work and foliage murals by DJ One Love, who is their visual artist, €aka€ Jamel, is a seasoned backdrop for the vibrant landscape of an intriguing and evolving international menu. This distinctive restaurant dubs its beverage menu €cool drinks€ to sip, while lingering at the sidewalk space or in the VIP area or more transformative areas, furnished with modern while leather furniture.

€Each event we can set up €Evolve€ to accommodate the performance, even with our [slightly raised] stage. Sometimes, we move all the furniture upstairs and others we leave it for lounging or dining,€ Moore said. Every Monday is Open Mic Night.
